Coleslaw is a perfect side to any barbecue or grilled meat dish. Here's a fancier version of an old favorite. Serves up to eight people
1/2 lb. of regular cabbage-shredded
1/2 lb. of purple cabbage-shredded
1/2 lb. of shredded carrot
One 20 oz. can of crushed pineapple
12 oz. of chopped walnuts
16 oz. of raisins
1 1/2 cups mayonnaise
5 Tbsp lemon juice
1/3 cup sugar
1/2 cup white vinegar
Combine first six ingredients in a bowl
Mix together dressing ingredients in a separate bowl
Once the dressing is made pour over the cabbage mixture. Let sit for an hour to marinade.
Chill and enjoy.
