Savory Red Potato Salad with Red onion and Dill
4-5 medium size red potatoes-no need to peel red skinned potatoes
2 hard boiled eggs finally chopped
1/2 cup chopped red onions
1 Tspn dill finely chopped
1 Tblspn Dijon mustard
1 Tblspn Dill relish
2/3 cup mayonnaise
Season Salt to taste
Pepper to taste
Boil potatoes until fork tender but not falling apart
Boil eggs with potatoes until hard boiled about 8-10minutes
Remove eggs and potatoes, cool in ice bath
When cool enough to handle, chop potatoes into medium sized pieces, peel and chop hard boiled eggs
Add ingredients to the potatoes and eggs before mixing so potatoes stay firm.
Keep refrigerated before serving.
The Fire It Up!BBQ Competition is a fundraising partnership between two nonprofits that serve and honor the firefighting community.
